Happy December!
Last weekend, Alan and I met Frank (our winemaker) at the Silvestri Tasting room in downtown Carmel-by-the-Sea. It was our "Wine Club" pick up day. Daniella had prepared a wonderful cheese and cracker spread that everyone was able to enjoy as they picked up their wine club bottles. We had such a great time, hanging out with our customers and sharing tales of life and wine. Thank you to everyone who was there and to everyone we missed seeing, we look forward to seeing you in the future.

Today, Alan and I spent the day at the vineyard, filming a small video for the Royal Manchester Children's Hospital. In 2020 we spent six weeks in Manchester, UK preparing the musical. We were invited by the hospital to visit the children but before we could go, Covid arrived, and we all had to leave the UK. It was heart breaking but ever since then we have sent holiday messages to the children and their families. This year we filmed our little piece in the vineyard. It was so beautiful and peaceful among the sleeping plants that it reminded us of how very fortunate we have been in our lives. We are grateful for so many things, our children and grandchildren, our relatives and friends, our community, Alans work, our children's work and especially you, our loyal customers! We want to take this moment to thank you all for your continued support. We say it every month, but it is True every month. We could not do this without you.

From The Winemaker
Hi all,
We have reached that time in the year when I start reflecting on this last year and how everything has unfolded. 2024 was, once again, very interesting. Lots of rain, cool spring, crazy hailstorm early on, then just about perfect weather until late September early October when we had that very long, excessive heat wave which hurried harvest along, to a near perfect November and early December, if anything this year has been interesting. Most of the wines are finished with their secondary fermentation, the malolactic fermentation, and now can be chilled down, and put to bed so to speak. For those of you who may not know this process it goes as follows: first primary fermentation (sugar to alcohol), wines get pressed and put to barrel and that is when I inoculate them with a bacteria that will convert the existing malic acid to Lactic acid. This means the wines need to stay warm, close to 70 degrees Fahrenheit for about a month. During this time, the wines are only protected from going bad by the small amount of CO2 they are creating. Once they are finished, I generally can adjust the acid to where I would like them to be as well as add the Sulfites that protect them, put a solid topper (bung) as opposed to the breather bungs, we use when CO2 is being produced, and last chill the wines down to 55-58 degrees F. This is how they will stay until we rack them (pumping the clean wine out leaving unwanted sediment to be dumped and the barrels cleaned) or bottle them. Needless to say, the stress of the winemaking process doesn't end until the wines are finished and put to bed, which we are very close. Woohoo!!! The tasting room has had a great time interacting with each and every one of our customers. Every experience in the tasting room is unique but one thing we can guarantee every time is excellent customer service, laughter and of course, exceptional wine.
