January 2026
I hope you all had a wonderful holiday season, filled with friends and family, food and drink (wine?) and lots of love! The Silvestri family missed our annual Christmas Eve vineyard stroll because we spent it in the north with our children and grandchildren, but we had plenty of food and wine and games and some great snow!
January brings us all back to our everyday lives of work and study, in front of our hearths, away from the wind and rain. But oh, how we love the rain. These rains make everything else possible in California and although they can sometimes be too much of a good thing, we welcome the rebirth they bring in the vineyard.
We wish you all a Happy New Year filled with the blessings of life on the Central Coast or wherever you call home. You are always invited to join us in our tasting room for a sip of our home in Carmel Valley!

From The Winemaker
Happy New Year!!
2025 is in the books, a year that flew by and like most years had its quirks. The wines of 2025 have all finished their secondary fermentation, the malolactic fermentation, and now are being chilled down to let them do their thing. What does that mean, you may ask? Well, it means they are now clarifying, all the heavy solids from the process slowly drop to the bottom of the barrels and the wine starts to look, well, like wine as opposed to a cloudier beverage. From here on out the work ahead looks like this: Topping the wine every month. Topping is adding wine so there is no head space, no extra oxygen. If there is head space it will create a space in which the bad guys can take over. We also will add sulfites every 8 weeks, letting the wines age with about 35 parts per million, which also protects against the bad guys. The bad guys are acetobacters, a bacteria that will convert wine into acetic acid which we all know as vinegar. Very important to be cleanly and on time so that we can bring you a quality product. The most important aspect of winemaking for me is to have our consumers trust that they will always get a quality, consistent product, and I believe over the last 12 years we have done that. That, of course, takes an incredible team, which we have. Vineyard manager Marshall, with his team Jose and Santiago, work tirelessly in the vineyard to get the best grapes, and me and the guys are really giving our all in the winery. I hope it shows! Anyway, we have received quite the blessing with an incredible amount of rain here so far, let's just hope it continues. Cheers and much gratitude to you all for your continued support.
