We are excited to announce that we are now pouring three new vintages in the tasting room: The new 2013 Pinot Noir, 2014 Rosé and the 2014 Pinot Blanc. With each new release our wine maker continues to elevate the complexity and expression of each varietal coming from our vineyard. These wines are truly delicious. 2014 Pinot Blanc:
$27.00 / WC $21.60
The Silvestri Pinot Blanc grapes are pressed and put in stainless steel tanks, racked to both 55-gallon stainless steel and neutral French oak barrels, and then inoculated with yeast to initiate primary fermentation (sugar to alcohol). The wine does not go through malo-lactic fermentation in order to maintain the "crispness" that the malic acid brings as opposed to the "buttery" aspect of lactic acid. It is then aged for 5-8 months before bottling.
Tasting Notes:
The 2014 Pinot Blanc bursts with peach, honeysuckle and dried apricot, and presents a soft mouthfeel that rolls into a firm yet balanced acidity. A lingering finish leaves your palate asking for more. This one is a crowd pleaser.
2014 Rosé:
$25.00 / WC $20.00
Our 2014 Rosé is made from 100% Pinot Noir. We use neutral French oak in the cellar and it is aged for about five months. This wine does not go through malo-lactic fermentation, but shows a full mouthfeel due to Sur Lie aging.
Tasting Notes:
A cool, crisp and dry Rosé that delivers bright acidity and soft, subtle aromas of watermelon, raspberries, strawberries, and a slight earthiness.
2013 Pinot Noir:
$32.00 / WC $25.60
After picking, our Pinot Noir is de-stemmed and whole berries are put into 3/4 ton fermenters where they cold soak for 24 hours before adding yeast. Whole berry fermentation maximizes the extraction of flavor and color. After another 24 hours we "punch down" 3 times a day for 10-14 days. After primary fermentation (sugar to alcohol) the juice is racked to one third to one half new French oak barrels. Malo-lactic fermentation takes about a month and then will remain in barrel for about 8-12 months until bottling.
Tasting Notes:
Swirling aromas of black cherry, rose and nutmeg with a slight earthiness abound in this Pinot Noir. Continue with a full mouthfeel that's rich and round and finish with cleansing acidity to balance it all.
Grab a glass to sit, sip and savor on it's own or pair it with roasted lamb and a mushroom sauté. Heaven!
