What a hectic, crazy time of year. But walking through downtown Carmel, I noticed that the town seems strangely quiet during the week. After the Thanksgiving weekend with its rush of family and friends, it's nice to take a breath and enjoy our beautiful little village. Carmel is particularly stunning decked out in its holiday finery. Take a stroll and drop by for a taste of cheer in our beautifully decorated tasting room for a break from your shopping. Francisco, Dorothea, Daniella, or Xuanlan would love to share their expertise with you to help you select the perfect Silvestri wine gifts for your favorite friends and family. Alan and I might even see you there!

From The Winemaker

Happy Thanksgiving everyone and hello December! It has been an amazingly fast year and as opposed to last year, we are done making wine this vintage, relatively early. Currently the wines are still progressing through the secondary fermentation (malolactic fermentation or the conversion of malic acid to lactic acid) which requires the wines to stay warm for about a month. It has been very cold this fall, which is fantastic for the vineyard and fall colors but not the best for that conversion, so we are currently trying to keep the winery somewhat warm, easier said than done. All in all though, I am super thankful/grateful for the year we had and the way the wines have turned out. So now we turn our attention to finishing up the 2021 vintage. Last week we racked them, basically pumping all the wine out of the barrels, consolidating like wines (i.e. 13.5 Cab. Sauv. barrels together in one tank) clean the barrels of any sediment, then go back into the barrels. Considering last year was so difficult to ripen everything, and we picked at sugar levels way below normal, all the wines are big, rich, and delicious, so once again, super thankful and grateful for that because honestly I was worried they were gonna be a bit lighter than normal, they are not, woohoo. So now we let the wines age and become their best selves. Thanks as always for the continued support, and happy holidays moving forward.

The tasting room is excited to host you during the holidays! Carmel slows down this time of the year and it is a perfect opportunity to come in for a tasting. Our tasting room is open from 12-6pm daily and offers a delightful flight to enjoy while picking out your favorite bottles of the season.

This month is December's wine club release! If you're in town and a wine club member, the tasting room holds a pick-up party the weekend of the 9th. We'll have charcuterie to pair with the wine and a possible visit from a man that works all year long to provide Silvestri with the best gifts, our winemaker, Frank... not Santa.
